This is one of my most cherished ingredients. First off, it's crazy high energy, coming in at a whopping 705kcal per 100g. This ingredient is one of the reasons we can make our meals so high energy, but without compromising on the use of healthy and natural ingredients. This coconut milk powder has a subtle flavour that blends with whatever herbs and spices you're using, and turns into a delicious, creamy sauce when you add a dash of warm water.

Delicious in both main meals and breakfasts.
For breakfast, it's great stirred through porridge if you can't take milk (or milk substitutes) with you. You can also eat it with cereal or muesli if you dissolve it in a little warm water first.
For main meals it makes a great sauce for both Asian cuisine (curries) and western dishes. It has a very mild flavour, meaning you can get away with using it instead of cream in dishes like pasta with mushrooms.
(The benefits over cream being that it's easier to transport, doesn't go off, doesn't make you ill if you're lactose intolerant, and you can eat it if you're vegan.)
