Delicious rehydrated in soups and stews, pasta sauces, stir fries - the list is long.
If using in something that has a lot of liquid already and needs to be cooked for more than 10-15 minutes (e.g. a stew), just pop the carrot strips straight in - they'll rehydrate beautifully. If you're using a lot of them, you might just need to add a little more liquid to the recipe than you usually do.
In drier dishes like stir fries or pilafs, rehydrate the carrots first in a little bit of boiling water. If possible, use the leftover water from rehydrating them in the meal as it'll have lots of the yummy vitamins and minerals in it.
